In a pan add some mustard oil.. fry whole red chilli until it fully fried.
In the same pan add 2 pricked green chillies and fry.. keep it aside
Add chopped onion into the same pan.. fry until light brown n soft.. add chopped garlic and fry
In a bowl add chopped coriander leaves, fried red chillies, green chillies, fried onion-garlic
Mash them together with 1 teaspoon of salt
The main flavour of bharta is ready
Now one by one add boiled veggies separately with the coriander-fried mixture
In a separate bowl take some coriander-fried mixture, add boiled potatoes.. add salt and some drops of mustard oil.. mix them with clean hand..
Same, do it with pumpkin.. in an another bowl take some part of coriander-fried mixture and boiled pumpkin.. add required amount of salt and mustard oil..mix them well..
Do the same process with boiled Courgettes(parwal).
For making tomato bharta, clean the gas-grilled tomatoes.. chop and add rest of the coriander-fried mixture.. add salt and mustard oil to it.. mix them
The tasty bhartas are ready to dig in..
We used to have it with boiled and pre-soaked rice with green chilli, piece of onion and lemon..
